I have a 4th gen iPod (monochrome) and when it starts booting into iPodLinux, it stops and says:
"Kernal panic: UFS: Unable to mount root fs on 03:03"
in which, I have no idea what that means!

I used this installer: http://ipodlinuxinstl.sourceforge.net/download.php
and i have 10.5.7

THe 4th Gen ipod nanos dont work with ipodlinux. You should have checked this page before installing:
http://ipodlinux.org/wiki/Generations

It isn't an iPod nano, it's an iPod.
I thought the "(monochrome)" would make that clear, sorry.

Oh sorry, I mistook monochrome for chromatic!
Anyways, you shouldnt use that installer. Its severely outdated.
For Mac users its recommended to do a manual install.

Well, ipodlinux is catered more to the technically proficient user...

Zeroslackr is an easy way to get ipodlinux but it has no mac support:
http://sourceforge.net/projects/zeroslackr/

You can read this thread about getting zeroslackr working with a macpod:
viewtopic.php?f=4&t=52

Alternatively if you have access to a windows computer, you could reformat your ipod as a winpod and then install zeroslackr normally.

Thank you!!!
But just making sure, I can still sync it with my Mac after it's formatted to FAT32 right?

No, winpods don't sync with macs. But who needs Apple OS when you have Rockbox! It has a way better music player. To install rockbox after installing zeroslackr, just extract the rockbox files to your ipod's drive and uncomment the rockbox line in loader2.cfg.
