For me, Hurdle #1 was pretty easy. Instead of diskutil, you can also unmount from the GUI interface of Disk Utility, which is in the Utilities folder. If ipodpatcher doesn't recognize the iPod, I found that it occasionally worked when you didn't unmount, started ipodpatcher, unmounted, and then accepted the terms of use and started patching.
